Chef Franklin Pardabe

Starting in Lima, Peru, Chef Cuisine Franklin Pardabe launched his career at one of the city’s top restaurants, guided by renowned Peruvian chef Gastón Acurio, who has influenced Peruvian cuisine worldwide. Make him strong in Peruvian food. Quickly making his mark, he moved to Buenos Aires, Argentina, to join La Mar, which ranked among the world’s top 50 restaurants.

With a desire to explore more cultures, he took on the role of Cold Kitchen Chef in Mexico for Yakumanka, another celebrated restaurant by Acurio. Shortly after, he was invited to be part of La Mar Doha’s opening in Qatar.

After nearly eight years of working alongside Acurio, he ventured into new cuisines at the Marriott Marquis Doha’s Brazilian restaurant, and later took part in the pre-opening team at the Four Seasons Hotel in Doha. Now, after seven years in Doha, he’s thrilled to embark on a new adventure with Above Eleven Phnom Penh.
